How to Make the Tastiest Savory Coconut Rice You’ll Ever Eat

My quest to learn how to cook coconut rice

It was just this year that I had the desire to eat coconut rice. But I didn’t know how to make it, so I went to (where else?)…the interwebs.

Holy Hannah Montana.

There are so many different variations on coconut rice out there!

Recipes that call for sugar, coconut cream instead of coconut milk, shredded coconut, cilantro, lime, long grain white rice, jasmine rice, and the list goes on.

I already knew that I didn’t want to use sugar just because we already eat enough sugar as it is. Why would I want to add it to our dinner plates?

And while I absolutely love the idea of adding shredded coconut, I don’t think the rest of my family would fall for it.

After lots of trial and error, I discovered the combination that I really like in a coconut rice, and everyone in my family really likes as well. I use regular coconut milk, water, jasmine rice, salt, and garlic. That’s it.

It’s divine, I tell ya.

How long does it take to make coconut rice?

For the most part, I like to make coconut rice in my Instant Pot because it’s totally hands-off. It’s a bit faster than doing it on the stove top, too.

When I make it, it takes about 5 minutes to come to pressure, 4 minutes to cook, and another 10-15 minutes for the pressure to naturally release. I plan on at least 24 minutes from start to finish.

I cannot speak for all pressure cookers, just the Instant Pot.

It’s a family favorite!

Every time I serve coconut rice, my husband can’t get over how good it is. And he’s not a coconut fan.

You could wait to make this coconut rice with the next Asian or Caribbean meal you make, or you could just start making it to go with anything and everything you make. That’s what I’ve been doing!

Savory Coconut Rice {Instant Pot}

This creamy, savory coconut rice is so quick in your Instant Pot or pressure cooker and tastes crazy good with pretty much anything you pair it with!

Prep Time 5 minutes
Cook Time 4 minutes
Natural Pressure Release 15 minutes
Total Time 24 minutes
Servings 8

Ingredients

  • 2 cups jasmine rice rinsed and drained
  • 1 can coconut milk full fat for a creamy rice
  • 1 3/4 cups water
  • 1 clove garlic minced
  • 1 1/2 tsp salt or to taste

Instructions

  1. Add all the ingredients to the pressure cooker and stir. 

  2. Cook for 4 minutes on high pressure. Let the pressure naturally release.

  3. Open the lid, give it a good stir, and serve.
