My husband introduced me to his special Tomato & Cucumber Salad just a few years ago, and I’ve been loving it ever since. We eat a ton of tomatoes and garlic around here, so we can usually throw this together at the last minute and have a scrumptious, healthy, and cheap side dish for just about any meal.
Per serving, it only costs around 41 cents and that is without shopping sales or using coupons on anything. You can pair this with some Choripán or just some grilled chicken. We love it in the summer, and I hope you will too!
Tomato & Cucumber Salad
Ingredients
- 3 Roma tomatoes
- 1 cucumber peeled
Dressing:
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 3 cloves garlic minced; about 1 1/2 tsp.
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dijon mustard
- 1/2 tsp sugar
Instructions

Cut each tomato in half lengthwise, then slice into thin half moons. Do the same with the cucumber. Put the tomatoes and cucumbers in a serving bowl.

Combine all the dressing ingredients in a small bowl and whisk.

Pour over the tomatoes and cucumber and mix together.

Chill before serving if desired.
