Meal planning in the summer???! Okay, okay, I’ll make it easy for you. I’m giving you more than 35 wonderfully fresh and refreshing meal ideas below, so no excuses, mmkay? 😉
Summer is in full swing and it’s the perfect time to eat fresh and refreshing meals. Yes, there is a difference between the two! Fresh meals are foods with plenty of in-season produce and refreshing meals are those that are light and taste like summer (popsicles come to mind) 😎
Whether you are on vacation or just trying to take it easy at home with the kids, simplifying your meals is so important. So as you meal plan for June, keep in mind everything you have going on. Are you going to be able to spend time in the kitchen cooking? If not, take some time late at night or early in the morning to prepare meals ahead of time. You will be so happy you did when it’s time to eat.
One way to make meal time faster and easier is by getting in the habit of doing just one or two meal tasks every day at the same time. I call this 15 minute meal prep because you just set the timer for 15 minutes and do one or two simple things that will make your life easier for meals. Give it a try, it really helps!
Tried-and-True Meal Ideas for June
When you sit down to meal plan for June, try to plan meals you are familiar with, especially if you have a lot going on. Only put new meals on the menu if you are committed to making them once you buy the ingredients. I know how easy it is to plan a meal, buy the ingredients, and then never actually make the planned meal because you “don’t feel like it.”
Below I am sharing with you recipes and meal ideas that I think belong on a meal plan for June. Any recipe with a link is one that we love at our house. The ones with asterisks and links are recipes I’ve been meaning to try and haven’t yet. The recipe ideas without a link are ones we like but don’t have a specific recipe we follow.
One caveat, some of these recipes technically aren’t “healthy.” Use your own discretion. If it’s a muffin, it’s probably not healthy, unless it’s made without sugar.
